- 100g Quorn Roast
- 250g sprouts, halved
- 1 tbsp vegetable oil
- 1 medium onion, finely diced
- 250g leeks, washed and cut into thin rings
- 1 tsp Italian Seasoning
- 1/2 tsp black pepper
- Salt to taste
- Fresh parsley, chopped
- Place the sprouts in boiling water for approximately 8-10 minutes until cooked but still firm. Drain and set aside
- Heat the oil in a shallow frying pan and fry the onion for 3-4 minutes then add the leeks and cook gently until both are softened
- Add the Quorn Roast and Italian seasoning and continue to cook for 3-4 minutes. Stir in the cooked sprouts and black pepper and salt to taste and continue to heat through until all the ingredients are hot
Enjoy with crusty bread.
