300g Quorn Pieces, cooked according to package directions
2 ripe avocados, pitted and diced
450g fusilli pasta, cooked and drained
½ cup red onion, finely diced
1 cup cherry tomatoes, halved or quartered
½ cup fresh basil, chopped
For the dressing:
¾ cup extra virgin olive oil
½ cup white wine vinegar
1 tbsp Italian seasoning
Sea salt and cracked black pepper, to taste
Method
In a large bowl, add Quorn Pieces, avocado, pasta, red onion, cherry tomatoes, and fresh basil.
In a jug, add extra virgin olive oil, white wine vinegar, Italian seasoning and salt and pepper to taste. Whisk to combine.
Drizzle dressing over pasta salad, and gently toss to combine. Serve immediately!
