Quorn Mince Curry

Let's Cook!

  1. Cook potato and cauliflower in simmering water for 8 minutes.
  2. Meanwhile, heat oil in a large saucepan and sauté onion for 3 minutes, add curry paste and tomato paste and cook stirring for a further minute.
  3. Stir in frozen Quorn Mince, water, drained cauliflower and potato and bring to the boil. Reduce heat and cook for 5 minutes, stirring occasionally.
  4. Add frozen peas and spinach and cook for a further 2-3 minutes. Season to taste.
  5. Serve curry with mango chutney, naan or chapati bread and rice.

1 large potato, peeled and cut into bite-sized chunks
2 cups cauliflower florets
1 tablespoon olive oil
1 onion, finely diced
¼ cup Madras curry paste
2 tablespoons tomato paste
300g packet frozen Quorn Mince
250ml water
1 cup frozen peas
2 cups baby spinach
