Quorn Fillets in Red Pesto Sauce

Rustle up a bowl of cooked tagliatelle or some warm ciabatta bread to accompany this easy supper dish! Perfect for impromptu entertaining.

Let's Cook!

  1. Heat the oil in a shallow pan and lightly brown the frozen Quorn Fillets or Pieces.
  2. In a bowl mix together the stock, tomato paste, pesto and thyme. Pour over the fillets or pieces. Cover and simmer for 10 minutes.
  3. Transfer the fillets or pieces to warmed plates. Stir the light cream into the sauce; add seasoning to taste and spoon over the fillets pieces. Garnish with fresh basil.

2 tablespoons olive oil

312g packet frozen Quorn Fillets or 300g Quorn Pieces

100ml vegetable stock
1 tablespoon tomato paste
2 tablespoons good quality red pesto
1 tablespoon fresh thyme, chopped
3 tablespoons light cream
Basil leaves, to garnish.
