Greek Style Salad

Let's Cook!

  1. Place frozen Quorn pieces in a bowl with 1 tablespoon each of the oil and lemon juice, toss well. Heat 1 tablespoon of the oil in a pan and cook quorn pieces for 6-7 minutes or until bowned.
  2. Combine the remaining olive oil and lemon juice, season to taste. Add spring onions,  mint and oregano.
  3. Arrange lettuce, tomato and feta cheese on serving plates, scatter with the cooked Quorn pieces and olives and drizzle with dressing.
  4. Garnish with chopped parsley.

 

TIP: Drizzle with an extra squeeze of lemon juice. Serve with warmed pita bread



Ingredients

300g packet frozen Quorn Pieces

5 tablespoons Extra Virgin Olive Oil

4 tablespoons lemon juice

4 spring onions, sliced thinly

1 tablespoon fresh mint chopped

1 teaspoon dried oregano

4 cups torn cos lettuce leaves leaves (or 2 baby cos)

4 tomatoes, cut into wedges

100g feta cheese, crumbled

12 kalamata olives, deseeded

1 tablespoon chopped parsley
