Let's Cook!
- Place frozen Quorn pieces in a bowl with 1 tablespoon each of the oil and lemon juice, toss well. Heat 1 tablespoon of the oil in a pan and cook quorn pieces for 6-7 minutes or until bowned.
- Combine the remaining olive oil and lemon juice, season to taste. Add spring onions, mint and oregano.
- Arrange lettuce, tomato and feta cheese on serving plates, scatter with the cooked Quorn pieces and olives and drizzle with dressing.
- Garnish with chopped parsley.
TIP: Drizzle with an extra squeeze of lemon juice. Serve with warmed pita bread
