Biriyani

A quick, easy and delicious recipe that's cooked in the microwave. It's also great cold, as a salad.

Let's Cook!

  1. Mix 2 tablespoons of the tikka paste with 3 tablespoons of water, coat the Quorn pieces well and reserve.
  2. In a large microwave safe dish place the rice, frozen vegetables, red onion, diced apricots 1 tablespoon of tikka paste and the crumbled stock cube. Pour over 600ml of boiling water and mix well, cover with cling film leaving a gap at the side to vent the steam, cook on high/full power for 6 minutes.
  3. Peel back film and stir in the Quorn pieces and any remaining marinade. Recover and cook for a further 6 minutes. Stand for 5 minutes to allow the rice to absorb all the liquid, then fluff up with a fork and stir through 2 tablespoons of the chopped coriander.
  4. Garnish with the remaining coriander and flaked almonds. 

Serve with poppodoms.

300g Quorn packet frozen Pieces
3 tablespoons of Tikka paste
250g basmati rice
200g frozen peas, corn and capsicum

1 red onion finely diced
1/4 cup chopped dried apricots

1 vegetable stock cube
600ml boiling water plus 3 tablespoons

3 tablespoons chopped coriander
Toasted flaked almonds to garnish
